The Wet Market

Julie took us to Wan Chai where the “wet market” is. It’s a huge outdoor market where the locals shop and can buy everything - not just wet stuff. Most prominent, though, is the display of every organ in every animal, and the famous "100 year old eggs". These are aged duck eggs and are usually just a few days old. They are soaked in a solution of tea leaves, lime, soda and rock salt and are eaten with ginger. Apparently they taste as though you've taken an egg, squeezed some juice on them and buried them in the dirt.
